I hope your Thanksgiving holiday was wonderful! We spent it with our family and, as usual, have lots of leftovers. When the holidays are over and you still have lots of turkey left, what can you do with it all? Turkey sandwiches are good, but that gets old pretty fast. There are lots of low fat, healthy ways to use up that leftover turkey, so there’s every reason to have healthy holidays.

First, chop, dice or shred your leftover turkey, place it in resealable plastic bags, and put it in the refrigerator. That way, you can reach in for a bag and use it as you need it. Once you’ve stored your leftover turkey, try using it in any of these healthy and low fat dishes:

Turkey Vegetable Soup. Add 2 cups of chopped turkey, chopped fresh vegetables of your choice and 1 cup of uncooked brown rice to 2 cans of fat-free, low sodium chicken broth and 2 cans of water. Cook in a crock pot or over a low heat until the vegetables are tender and the rice is cooked.

Turkey Wrap. Mix some curry powder, dill, or other herbs of your choice with low-fat mayonnaise, chopped celery and diced or shreaded turkey to make a turkey-salad filling. Spoon some of the turkey salad on a whole wheat tortilla or sandwich wrap, add cranberrys, a bit of stuffing and shreaded lettuce. Then role it up.

Turkey Pizza. Start with a frozen thin crust cheese pizza. Add chopped veggies of your choice and shredded turkey, and then bake.

Turkey Tacos with Mango Salsa. Simmer diced or shredded turkey in a pan with chili powder, curry powder, or other spices of your choice, and a bit of fat-free, low sodium chicken broth. Make mango salsa by chopping up 1 ripe mango, cilantro and the juice of 1/2 lime. Spoon heated turkey mixture into soft corn tortillas, add salsa and season to taste.

Turkey Stir-Fry. Sauté chopped onions until soft. Add broccoli spears and cook until bright green, then add sliced mushrooms and cook until tender. Add chopped or shredded turkey and cook until hot, adding soy sauce or other spices of your choice while cooking. Serve over rice or noodles.
